My Mama Made That!

This is the Junior League's newest cookbook! Here is one of my favorite recipes:

2 lb. lump crab meat
1 cup dry bread crumbs
1 cup mayo
2 eggs, beaten
1 red bell pepper, chopped
1 yellow pepper, chopped
1/4 cup cilantro, finely chopped
3 scallions, finely chopped
salt and pepper to taste
peanut oil for frying
Combine the crab meat, bread crumbs, mayo, eggs, bell peppers, cilantro, scallions, s&p in a bowl and mix well. Shape into 3-inch patties. Heat 1/2 inch peanut oil in a skillet over medium-high heat until hot but not smoking. Add the crab cakes and cook for 2-3 minutes on each side or until golden brown. Drain on paper towels. Serves 4
